Chicken is my nations most popular meat however when it comes to the barbecue it's probably less popular because people are more concerned to ensure that the meat is properly cooked. I've known some even to pre-cook chicken in the microwave first but this really isn't necessary if you follow the basic rules that I've set out before.

Just to re-iterate one point when using a charcoal barbecue grill, always give the coals time to settle before starting to cook (about 45 minutes) because despite chicken being described as a lean meat, the fat that is under the skin mobilizes very quickly and makes for serious flames. You don't get beautiful barbecue chicken with a crispy skin but raw chicken with what looks like an dirty oily coating, best described as a health hazard.

So when it comes to how to barbecue chicken there are essentially four different styles, rotisserie, spatchcock, smoker or roast, the fist two are the ones I'm going to concentrate on being specifically for the grill. Hopefully smoked chicken is self explanatory and roast chicken is great in a kamado ceramic BBQ but maybe that's for another day.

Rotisserie

Rotisserie is when you barbecue chicken on a spit roaster and rotate it over the heat so effectively grilling and continually turning to ensure that the chicken is cooked evenly all over. Rotisserie is probably the most difficult way to barbecue chicken because it's not so easy to tell when the chicken is done and it's important to ensure that the inner cavity is cooked. This means that it needs to be cooked well and for longer than if you were roasting the bird but that doesn't mean that it's going to be dry. The secret is to ensure that your barbecue chicken is basted every 15 minutes with the juices in the drip tray. Check for good cooking either by using a BBQ thermometer or simply stabbing the thigh with a skewer and when the juices run clear (no blood) then it's done. If using a barbecue thermometer then you're looking for a breast temp of 165°F and 180°F in the thigh and wing.

Spatchcock

This is my preferred way of how to barbecue chicken because it's relatively quick (about 45 - 50 minutes) and because the cavity is exposed, you're guaranteed to have the inside well cooked. The challenge is in the preparation because you've got to cut the chicken down either the backbone or the breast bone and this is best done with shears or a sharp knife. When using a knife I tend to cut the breast bone because it's easier. When you finished cutting, flatten the bird and place it in a BBQ basket and then you're ready for the grill, 25 minutes each side and then your done. TIP - less fat drips from the inside of the chicken so cook this side first.

Both the above are essentially grill techniques and to simply turn these into full blown barbecue chicken recipes then simply season with salt and pepper. This will add flavor but most importantly the salt will help crisp up the skin - not the most healthy part of the chicken but certainly tasty. If you then want to enhance the recipe then break out your favorite homemade barbecue sauce.

Weber grill products come in so many different models. While we can't tackle each one of these products, why don't we mention some of the most popular Weber grill models, take a look at their features, and see if they also have affordable prices.

The Weber 386002 Q-100 Portable Gas Grill is one of those popular models. It measures 16 inches x 27 inches x 23 ½ inches with open lid. The cooking grates feature porcelain-enameled cast iron, have a drip pan, and feature a weather-resistant handle. The lid and the body of this model are cast-aluminum and have a nylon frame that is glass-reinforced. Its BTU is similar to that of the Weber 386002 Q-100 Portable Gas Grill and just like the other Weber grill models, this also has a push-button ignition, an adjustable burner valve, porcelain-enameled cast-iron cooking grates, drip pan, and weather-resistant handle. The dimension of this model is 16 x 27 x 23 ½ inches and has a five-year warranty.

If we are to observe, the Weber grill models almost have the same features in general. However, they also have distinct features that explain the differences as far as their prices are concerned.

Consider the features of the Weber 741001 22 ½-Inch One-Touch Silver Kettle Grill. While the general features are the same as the other Weber grill models including, but not limited to, what it is made of, what type of cleaning and venting system it has, and what kind of handles it has, it is distinct because it looks different from the other grills. At US.70, it is cheaper than the other Weber grill models. In fact, this kettle grill model may be bought at a lower price in a few retail stores.

Sometimes, if not most of the time, it is actually better to take a look at the actual model. It is helpful if we see pictures of them on the Internet but it is still better if we exert a little effort to check out retail stores. It may be a little tiring if we still have to go out of our way just to check out different Weber grill models, but don't we want to purchase the best ones for us? These Weber grill models are affordable but they also don't come cheap. So, let's go out and take a look at the Weber grill model that suits us best.

Grilling After Dark

Why should something as simple as a Weber Grill Light be a favorite accessory? Where I live in Texas, we can grill year round. We'll have the occasional severe cold snap but for most of the winter it's just chilly but not really too cold to grill. I put on my big coat, get a warm drink and I'm good to go. However, it does get dark pretty early and by the time I get home from work the sun is going down. If I hurry, I can get the food on the grill using natural light but by the time I finish it is almost always dark.

The first few times I grilled in the dark I didn't do too well. I needed to check the food and I couldn't find a good way to hold my flashlight while using both hands. I tried holding the light between my arm and my body while using both hands but that did not work. Placing the flashlight beside the grill didn't work well either. I could not get it placed high enough to shine down on the food.

The next time I grilled I tried setting a desk lamp next to the grill and that didn't work either. The plastic parts of the lamp were not made to handle the heat a grill throws off and I did not want to ruin the lamp so I had to find something else. I tried a shop light but I had no place to clip on to high enough and close enough to the grill surface. At any rate, I found that having a an external light with an extension cord was quite a hassle. It increased my setup time and started to unnecessarily complicate what should be a simple process. What I needed was a light specifically made to work with my Weber Genesis Gold grill.

My Solution - The Weber 7516 Grill Out Handle Light

After doing some checking, I found the Weber 7516 Grill Out Handle Light. What a great little gadget this little Weber grill light is! It installed very easily and fit the handle of my grill perfectly. This Weber Grill Light works like a charm, even turning itself on and off as I open and close the grill lid. It uses 3 "triple A" batteries to power 3 LED's and provides plenty of light shining directly onto the grill grates, exactly where I need it.

I know it may seem silly to get so excited over something as simple as a light but believe me, if you ever need to grill in the dark, you need a grill light. I recommend this particular light very highly! The Weber Grill Light that I found is made for a specific set of Weber grills but Weber makes other lights for their other gas and charcoal grills.

And remember, there are grill lights made for just about every brand of grill made today. So if this particular light doesn't fit your grill, check out the other lights. If the manufacturer does not make a light to fit, there are generics that you can use. Most all will work better than any homemade contraption! I'm sure you will find something that will work for you too.
